The first ever release of a joven under the Valles label, it is a carefully selected blend of some of their finest tequilas, combining 2 month old reposado aged in both French and American oak, then blended with tequila blanco.
Distilled at the famed Cascahuin distillery in the Lowlands of Jalisco, the artwork on the label is a tribute to the distillery's founder, Salvador Rosales Briseño. The agave for this anniversary release came from three separate ranchos; Rancho Huasimas, Rancho Llanitos de Arriba, and Rancho El Limón. They were planted in 2016, 2017, and 2017 respectively, and harvested in 2021, 2022, and 2022 respectively. Roasting occurred over 72 hours in a 12 ton wood-fired brick oven, and fermentation took an additional 72 hours with the bagasse and native yeasts in a 2900 Liter brick tank. Master distiller, Salvador Rosales Torres, then distills the initial run on a stainless steel alembic with copper serpentine inside. This ensures that the tequila maintains contact with copper, but helps keep the cost attainable for the small artisanal producers. The second distillation, or "rectification" occurs on a 350 L copper alembic, creating a rich and nuanced tequila ideal for sipping.
Look for notes of wet stone, toasted vanilla, pine, nutmeg, pepper and agave honey.
