• Single cask #18-40, which is an organic single malt. It is a 6 year whisky that spent all its time in a STR wine barrel (i.e. shaved, toasted, and re-charred. This method was made famous by the late great Jim Swan). It was distilled using 100% Scottish barley and is non-chill filtered with natural color at cask strength. Impressively, less than 300 bottles of this organic single malt were bottled.

  Look for notes of salted taffy, biscuit, white flower, dry grass, green apple, a dusting of cocoa powder, dried apricot, orange citrus oil. At the end I caught a little spice on the tongue with a soft finish.

  Nc’Nean Distillery focuses on producing organic spirits with minimal impact on their local environment. They are located about as far west in the Highlands as possible – nearly to the Isle of Mull. Among other accolades, it was the first in the UK to reach net zero carbon emissions during whisky production. Their distillery operates with renewable electricity and they help further offset emissions by assisting in the cultivation of their local forests. As if that wasn’t enough, they also use 100% recycled glass for their bottling.
