Description
Patrick St. Surin is a distiller in Carrefour-des-Peres, outside of Milot in the norther region of Haiti. The sugarcarte is harvested by hand, crushed, and the juice is fermented in large, open-top wodden tanks with the addition of sugarcane syrup in the local tradition. It is distilled in a small alembic still and bottled by hand.
