Description
This pechuga de papalometl is a very limited run of Agave Potatorum that was produced in the spirng of 2022. A batch of only 80 liters, it was produced with around 75 wild-harvested papalometl. Adhering to the custom of seasonality, this mezcal is only distilled once per year in early May to celebrate the end of the distillation season and the anniversary of the project. It is produced by distilling the papalometly a second time with the addition of a guajalote (wild turkey) that has been rubbed with the family's mole poblano recipe. .
