• Remarkably rare in the mezcal industry, Zinacantan Espadilla Silvestre is produced only from wild-harvested Agave Angustivolia. The most common agave utilized for mezcal production, Angustifolia is widely known as Espadin. Roughly 85 percent of mezcal available on the market is produced from Espadin. As such, the rapid growth of industry has led to overharvisting of the species and a proliferation of cloned monocrops, often causing low sugar levels and lack of flavor in the final product. Zinacantan is one of the few brands with access to some of the last remaining zones of wild angustifolia, producting and espadin of unrivaled complexity and body.
